Chow mein arrived in Nepal by way of Tibet and China and became genuinely Nepali on the way — wok-tossed hot and fast, with more spice than you would expect and never any grease. Keema noodles are the street-cart version: minced meat cooked down with onion, tomato and ginger, then folded through the noodles. Sadeko noodles are served cold and sour, which surprises people the first time.
