Momo

Momo is the national comfort food of Nepal: a thin wheat wrapper pleated by hand around a seasoned filling, then steamed or fried. The pleating is not decoration — each fold traps a pocket of steam, and the filling releases its own juice as it cooks, so a properly closed momo arrives with a spoonful of hot broth still inside. Bite the first one carefully. Every momo here is pleated in house, on the day.

What Nepal actually does to a momo once it comes out of the steamer. Jhol means broth — the dumplings arrive sitting in a warm, nutty sesame-tomato gravy you drink once they are gone, and it is the single most-ordered thing on any Kathmandu momo menu. Chili momo is fried then wok-tossed Indo-Chinese style; chatpate is tossed cold and tangy with peanut and lime; jhaneko is finished with sizzling mustard oil poured over at the last second.

The Newars are the indigenous people of the Kathmandu Valley, and their food is a cuisine of its own — heavy on mustard oil, timur pepper and beaten rice, eaten in feasts rather than courses. Samay baji is the whole idea on one plate. Thukpa is the Himalayan answer to a cold day: noodles in a broth simmered long enough that it does the work by itself. It came down from Tibet and became Nepali on the way. Gyathuk is the older Tibetan version — thicker noodles, clearer broth. The buff sukuti bowl is the traditional one, built on sun-dried buffalo that gives the broth a smokiness nothing else does.

Chow mein arrived in Nepal by way of Tibet and China and became genuinely Nepali on the way — wok-tossed hot and fast, with more spice than you would expect and never any grease. Keema noodles are the street-cart version: minced meat cooked down with onion, tomato and ginger, then folded through the noodles. Sadeko noodles are served cold and sour, which surprises people the first time.

We cook ours Hyderabadi style: long-grain basmati layered with marinated meat, saffron, fried onion and whole spice, then left undisturbed. Dal bhat is not a dish, it is the day. Rice and lentils with a curry, a green, a pickle and a papad — eaten twice a day, every day, across the whole country. Dhido is the older hill-country version, made from buckwheat or millet instead of rice and eaten with your hands.

Paneer is fresh pressed cheese that holds its shape in the pan, so it takes on a sauce without dissolving. Lassi is the traditional pairing for a hot curry — a yogurt drink that cools the palate far better than water does, which is exactly why it is served with spicy food. The leaf comes from Ilam, in the eastern hills, which grows some of the best tea in the world and gets almost none of the credit.
