What makes the biryani dum

Dum means the pot is sealed and finished over low heat, so the rice steams in the aromatics instead of boiling in them. Long-grain basmati is layered with marinated meat, saffron, fried onion and whole spice, then left alone. Open the lid early and you have lost it.

That is why biryani is a made-to-order dish and not something we can hand you in four minutes — give it the extra time, tell us your heat level, and it arrives with raita to cool it down. Chicken, goat, lamb, shrimp or vegetable.

How the curries actually differ

Most Indian menus list twelve curries and explain none of them. The differences are real and they are mostly about the base:

Korma — cashew and cream, barely any chilli. The mildest thing on the menu, and the safe order for a child or a nervous guest. Butter chicken and makhani — tomato, butter and cream. Sweet-ish, rich, mild. Tikka masala — the same family, but the meat is charred in the tandoor first, which is where the smokiness comes from.

Kadai and jalfrezi — no cream. Bell pepper, onion and freshly pounded spice, cooked hot and fast, so they taste brighter and sharper. Saag — slow-cooked spinach, gentle and earthy. Vindaloo — vinegar, garlic and red chilli, Goan and genuinely hot. That is the one to order if you mean it.

Every one is available in chicken, goat, lamb, shrimp, paneer or vegetable, and every one is cooked to the heat level you pick when you add it to the cart.

Vegetarian and vegan

A large share of India eats no meat at all, so the vegetarian half of this menu is a proper menu and not three afterthoughts. Paneer — fresh pressed cheese that holds its shape in the pan — comes saag, makhani, kadai and matar. Beyond it: chana masala, aloo gobhi, aloo matar, baingan bharta, bhindi masala, dal makhani, veg korma, veg biryani and tofu vindaloo.

Several are vegan or can be made vegan by leaving out the cream or ghee. Ask when you order and we will tell you honestly which ones, rather than guessing on your behalf.
