Vegetarian food is not an afterthought in Nepali or Indian cooking — daal is the everyday centre of the plate, not a side. Paneer is fresh pressed cheese that holds its shape in the pan, so it takes on a sauce without dissolving. The Nepali end of this page is where it gets interesting: allo tama is sour with bamboo shoot, gundruk jhol is made from fermented greens, and neither tastes like anything on an Indian menu.
